It's possible to set sheet width under Layout, but it's not convenient. I would rather like to see it under Sheet->Width

Truly say, this is not Sheet width.
This is content width which will be applied not only to Sheet, but for all controls at the top level of template.
E.g. it changes Header width or Columns width which are outside of Sheet.
While Sheet and controls above have width 100% and they a limited with content width.
BTW, content width depends on screen resolution of device where the site viewed.
You can specify such width separately for each device group like Laptops or Tablets.
Such content width values are same as Bootstrap container width:
