Hello Christopher,
Sheet is the main layout control, it conatines all other elements of the main content area inside of it. It can contain all containers, sections, etc. Usually it is used same accross all pages.
Container is a separate content element, that can be added to the sheet (or outside of it) on particular page and customized as required. You may notice that containers can has size set by the user, there can be several containers next to each other. Unlike Container, Sheet can;t have set size, it always fills the width of the content area and its height depends on the content placed inside of it.
