I am very much asking for help on how to do something like this:

contact: ........@.........com (show)

when clicked it changes to:

contact: someone@server.com

and sends the event to Analytics?

Hello,

It depends on the CMS used because it provides functionality for a Contact form. In Themler you can create design for the contact form.
