1. It is not possible, to remove submenu from the Cart Link. This is the way the Cart Link works in wooCommerce.

2. Also how do I remove the text that says "cart"?

Please select the Cart Link control and in the Property Window select Cart Link format. There are variants without the "Cart" text:

Please navigate Cart Link >> Submenu >> Fill and select the background fill color:
