Can't change the text in "Headline" or "Slogan", none of them is editable. Any help ?

Go to the Insert tab >> More and there will be Headline and Slogan controls. Insert them into the header.

I know how to add this in the CMS backend, but how to you insert these items into the template header in Themler in the first place? A basic question I realise, but that's where I'm at. I've managed, I think, to create a 'header' area: now how do I put the site title and slogan, and perhaps other elements, within it?

If you mean default Headline and Slogan text in Themler themes - it can be changed from CMS backend (File >> CMS Admin Panel).
For example, for Wordpress themes the text of Headline and Slogan Controls can be changed under the Settings >> General >> Site Title and Tagline.
In Joomla the text of the Headline and Slogan controls can be changed under Joomla Template Manager >> Styles >> click your Themler template's name >> Details >> Headline and Slogan.
