So long I have not seen problems with Beta versions. Not in theme functionality anyway. Some options start to make problems maybe, but they can be reached from different ways, so not big problem there.
But I do agree it Beta testing should (Must) be an option on theme to theme basis. I can fix any problem no matter how tight deadline for website is, if nothing manually in code. Can only imagine what chaos would be for some beginner User, activating Beta versions, Beta version make fatal PHP error, and client want to see website tomorrow or tonight online, as agreeded.
Some projects has to be put outside Beta testing. I know it is very easy to go to profile and disable Beta testing when updating specific themes. But it is very easy to forget about it too. And never know if you have problem with theme because of Beta or stable version.
I lake your proposal to have 2 circle buttons in top bar, one for stable update, second for Beta update. One red, second with some other color. With different text on mouseover.
