I'm sure this is an easy question, but I couldn't find the answer when I did a search. How do I edit the bullets to use an image or even a different shape?

For this please go to the Design tab >> More Styles >> Bullet List >> Image / Shape and set an image and/or shape for the bullets:

Thank you! I feel stupid, I was using the settings screen on the right hand side, and the icon and shape aren't in there. They are only in the drop down.
